Here’s a flavorful and easy Pepper Steak recipe—tender beef strips stir-fried with bell peppers and onions in a savory sauce. This dish is quick enough for a weeknight meal but delicious enough to impress guests.

Ingredients

For the Steak:

  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain

  • 1 tbsp soy sauce

  • 1 tbsp cornstarch

  • 1 tbsp vegetable oil

For the Stir-Fry:

  • 2 tbsp vegetable oil (divided)

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

  • 2 garlic cloves, minced

  • 1 tsp fresh ginger, grated (optional)

For the Sauce:

  • 1/4 cup soy sauce (low sodium preferred)

  • 1/4 cup beef broth or water

  • 1 tbsp oyster sauce (optional, for richer flavor)

  • 1 tbsp cornstarch

  • 1 tbsp brown sugar (or white sugar)

  • 1/2 tsp black pepper

  • 1 tsp sesame oil (optional)


Instructions

  1. Marinate the Beef:

    • In a bowl, mix sliced beef with 1 tbsp soy sauce and 1 tbsp cornstarch. Let it sit for 10–15 minutes while preparing other ingredients.

  2. Prepare the Sauce:

    • In a separate bowl, whisk together soy sauce, beef broth, oyster sauce (if using), cornstarch, sugar, black pepper, and sesame oil. Set aside.

  3. Cook the Vegetables:

    • Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add onions and bell peppers; stir-fry for 2–3 minutes until just tender. Remove and set aside.

  4. Sear the Beef:

    • Add another 1 tbsp oil to the skillet. Add the marinated beef in a single layer. Cook 2–3 minutes per side until browned and mostly cooked through.

  5. Add Garlic and Ginger:

    • Stir in garlic and ginger. Cook for 30 seconds until fragrant.

  6. Combine Everything:

    • Return vegetables to the skillet. Pour in the sauce. Stir-fry everything together for another 2–3 minutes until sauce thickens and coats the beef.

  7. Serve:

    • Serve hot over steamed rice or noodles. Garnish with green onions or sesame seeds if desired.


Tips

  • Beef: Slice it thinly for tenderness, and make sure it’s against the grain.

  • Vegetables: Customize with mushrooms, snap peas, or broccoli.

  • Heat: Add red pepper flakes or a splash of chili oil for spice.
