🍫 Pecan Pie Brownies Recipe

✅ Yield:

12–16 servings

🕒 Time:

  • Prep: 20 minutes

  • Bake: 40–45 minutes

  • Cool: 1 hour

🧾 Ingredients:

🔹 For the Brownie Base (you can also use a boxed mix if in a rush):

  • 1/2 cup (1 stick) unsalted butter

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup all-purpose flour

  • 1/4 tsp salt

  • 1/4 tsp baking powder

✅ Optional: Add 1/4 cup chopped chocolate or chocolate chips for extra gooeyness.

🔹 For the Pecan Pie Topping:

  • 1/2 cup light corn syrup (or dark for richer flavor)

  • 1/2 cup brown sugar, packed

  • 2 large eggs

  • 2 tbsp unsalted butter, melted

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1 1/2 cups pecan halves (or chopped if preferred)

🍽️ Equipment:

  • 8×8 inch baking pan

  • Mixing bowls

  • Whisk & spatula

  • Saucepan (if melting butter)

  • Parchment paper (optional but recommended)

🔪 Instructions:

Step 1: Prep the Pan

  1. Preheat oven to 350°F (175°C).

  2. Line an 8×8 inch baking pan with parchment paper or grease it well.

Step 2: Make the Brownie Layer

  1. In a medium saucepan or microwave-safe bowl, melt the butter.

  2. Stir in sugar, eggs, and vanilla extract.

  3. Add cocoa powder, flour, salt, and baking powder. Stir until just combined.

  4. Pour into the prepared pan and spread evenly.

📝 If using a boxed brownie mix: prepare it according to box instructions and pour it into the pan.

Step 3: Pre-Bake the Brownies

  • Bake the brownie base for 15 minutes. This partially sets it so the topping doesn’t sink in.

  • Remove from oven but keep the oven on.

Step 4: Make the Pecan Pie Topping

  1. In a medium bowl, whisk together:

    • Corn syrup

    • Brown sugar

    • Eggs

    • Melted butter

    • Vanilla

    • Salt

  2. Stir in the pecans until evenly coated.

Step 5: Assemble and Bake

  1. Carefully pour the pecan topping over the partially baked brownies.

  2. Return to the oven and bake for 25–30 minutes, until the top is golden and just set. The center should jiggle slightly but not be wet.

Step 6: Cool and Serve

  1. Let the brownies cool completely in the pan (about 1 hour) before cutting.

  2. For clean cuts, chill in the fridge for 30 minutes before slicing with a sharp knife.

🍴 Tips:

  • For easier cleanup, line the pan with parchment.

  • Store leftovers in an airtight container at room temp for 2–3 days or in the fridge up to 5 days.

  • Serve with a scoop of vanilla ice cream for extra indulgence.
