Peanut Butter Blondies with Fudge Frosting

Ingredients

For the Blondies:

  • 1 cup (240g) creamy peanut butter

  • 1/2 cup (115g) unsalted butter, melted

  • 1 cup (200g) brown sugar, packed

  • 1/2 cup (100g) granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 1/4 cups (150g) all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

For the Fudge Frosting:

  • 1/2 cup (115g) unsalted butter

  • 2/3 cup (65g) unsweetened cocoa powder

  • 3 cups (360g) powdered sugar

  • 1/3 cup (80ml) milk (add more if needed)

  • 1 teaspoon vanilla extract


Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or grease it lightly.

  2. Make Blondie Batter:
    In a large bowl, mix together the melted butter and peanut butter until smooth. Add the brown sugar and granulated sugar and stir well. Beat in the eggs one at a time, then add vanilla.

  3. Combine Dry Ingredients:
    In a separate bowl, whisk together the flour, baking powder, and salt.

  4. Mix Together:
    Gradually add the dry ingredients to the wet, stirring until just combined.

  5. Bake:
    Pour the batter into the prepared pan, spreading evenly. Bake for about 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean (a few crumbs are okay). Let cool completely.

  6. Prepare Fudge Frosting:
    In a medium saucepan, melt the butter over low heat. Remove from heat and whisk in cocoa powder until smooth. Alternately add powdered sugar and milk, beating to spreading consistency. Stir in vanilla.

  7. Frost Blondies:
    Spread the fudge frosting evenly over the cooled blondies.

  8. Chill & Serve:
    Refrigerate for 30 minutes to set the frosting before slicing. Serve and enjoy!
