Here’s a delicious Pasta Salad with Homemade Dressing recipe — it’s fresh, colorful, and perfect for picnics, potlucks, or a quick lunch!


🥗 Pasta Salad with Homemade Dressing

🍝 Ingredients

For the Salad:

  • 12 oz (340 g) rotini or bowtie pasta

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1/2 cup red bell pepper, chopped

  • 1/4 cup red onion, thinly sliced

  • 1/2 cup black olives, sliced

  • 1/2 cup mozzarella pearls or cubed cheese

  • 1/4 cup fresh parsley or basil, chopped (optional)

Optional Add-ins:

  • 1/2 cup chickpeas or white beans

  • 1/2 cup salami, diced

  • 1/4 cup pepperoncini or banana peppers


🧄 For the Homemade Dressing:

Classic Italian Vinaigrette Style:

  • 1/3 cup olive oil

  • 3 tbsp red wine vinegar (or lemon juice)

  • 1 clove garlic, minced

  • 1 tsp Dijon mustard

  • 1/2 tsp dried oregano

  • 1/2 tsp dried basil

  • 1/4 tsp salt (or to taste)

  • 1/4 tsp black pepper

  • Optional: pinch of red pepper flakes


👩‍🍳 Instructions

  1. Cook the pasta

    • Bring a large pot of salted water to a boil.

    • Cook pasta according to package instructions until al dente.

    • Drain and rinse with cold water to cool.

  2. Make the dressing

    • In a bowl or jar, whisk together all dressing ingredients until well combined.

    • Taste and adjust seasoning as needed.

  3. Assemble the salad

    • In a large mixing bowl, combine cooked pasta, veggies, cheese, and any add-ins.

    • Pour the dressing over the salad and toss to coat evenly.

  4. Chill & Serve

    • Cover and refrigerate for at least 30 minutes to let the flavors meld.

    • Toss again before serving and garnish with fresh herbs if desired.


📝 Tips:

  • Make it gluten-free: use gluten-free pasta.

  • Make it vegan: omit cheese or use a plant-based alternative.

  • Make ahead: it tastes even better the next day!
