🍽️ Pan-Seared Pork Chops with Vegetables and Apples
🕒 Prep Time: 15 min
🍳 Cook Time: 25–30 min
🍂 Servings: 4
🧂 Ingredients:
For the Pork Chops:

4 bone-in or boneless pork chops (about 1 inch thick)

Salt & black pepper

1 tsp smoked paprika (optional)

1 tbsp olive oil

1 tbsp butter

Vegetables & Apples:

1 medium red onion, sliced

2 medium carrots, peeled and sliced

1 red bell pepper, sliced

2 apples (like Honeycrisp or Fuji), cored and sliced

2 cloves garlic, minced

1 tsp fresh thyme (or ½ tsp dried)

1 tbsp apple cider vinegar

½ cup chicken broth (or white wine)

Salt & pepper, to taste

Optional: A drizzle of maple syrup for sweetness

🔪 Instructions:
1. Prep the Pork Chops:

Pat the pork chops dry with paper towels.

Season both sides generously with salt, pepper, and paprika.

2. Sear the Pork:

In a large skillet, heat olive oil over medium-high heat.

Sear pork chops for 3–4 minutes per side until golden brown. (They don’t need to be fully cooked yet.)

Remove from skillet and set aside.

3. Cook the Vegetables & Apples:

In the same skillet, add butter.

Add sliced onion, carrots, and bell pepper. Sauté for 5–6 minutes until they begin to soften.

Add apples, garlic, and thyme. Cook for another 2–3 minutes.

4. Deglaze and Simmer:

Stir in apple cider vinegar and chicken broth (or wine). Scrape up any browned bits from the bottom.

Optional: Add a drizzle of maple syrup if you’d like a sweeter touch.

Return pork chops to the skillet, nestling them among the veggies.

5. Finish Cooking:

Reduce heat to medium-low. Cover and cook for 7–10 minutes until pork chops are cooked through (internal temp of 145°F / 63°C).

Let rest for a few minutes off the heat before serving.

🍴 Serving Suggestions:

Serve directly from the skillet with crusty bread, mashed potatoes, or over rice.

Garnish with extra fresh thyme or chopped parsley.
