1 lb (450g) of sausage (Italian sausage, bratwurst, or your choice)

4-5 medium potatoes, diced (Yukon Gold, Russet, or red potatoes work well)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, sliced

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh herbs (like rosemary or thyme), optional

Parsley, chopped (optional for garnish)
Instructions:

Preheat the oven to 400°F (200°C).

Prepare the sausage: If using large sausages, cut them into bite-sized pieces or slices. If using smaller ones, you can leave them whole or slice them as well.

Prepare the vegetables: Dice the potatoes into cubes, and slice the bell peppers and onions into strips.

Toss the ingredients together:

In a large mixing bowl, combine the diced potatoes, sausage pieces, bell peppers, and onions.

Drizzle with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together until evenly coated.

Spread the mixture on a baking sheet: Lay the sausage and vegetable mixture in a single layer on a large baking sheet. For even cooking, try not to overcrowd the pan.

Roast in the oven: Place the baking sheet in the oven and roast for 30-40 minutes, flipping everything halfway through. The potatoes should be golden and tender, and the sausage should be nicely browned.
