Oven-Fried Squash

Here’s a simple and tasty recipe for Oven-Fried Squash that’s crispy and delicious — like fried but baked for less oil and mess!


Oven-Fried Squash

Ingredients:

  • 2 medium yellow squash (or zucchini), sliced into 1/4-inch thick rounds

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 cup breadcrumbs (Panko works great for extra crunch)

  • 1/2 cup grated Parmesan cheese (optional, but adds great flavor)

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Cooking spray or olive oil for brushing


Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare squash: Wash and slice the squash into rounds about 1/4-inch thick.

  3. Set up dredging stations:

    • Place the flour in one shallow bowl.

    • Beat the eggs in a second bowl.

    • In a third bowl, mix the breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.

  4. Coat the squash:

    • Dip each squash slice into the flour, shaking off excess.

    • Then dip into the beaten eggs.

    • Finally, coat thoroughly in the breadcrumb mixture, pressing gently to adhere.

  5. Arrange on baking sheet: Place the coated squash slices in a single layer on the prepared baking sheet. Spray lightly with cooking spray or brush with olive oil to help them crisp up.

  6. Bake: Bake for about 20-25 minutes, flipping halfway through, until the squash is golden brown and crispy.

  7. Serve: Serve warm with your favorite dipping sauce — ranch, marinara, or a spicy aioli work great.
