Here’s a  Oven-Baked Cabbage Burgers recipe that combines savory beef (or plant-based alternatives), shredded cabbage, and flavorful seasonings into a satisfying, healthy, and simple dish. This is not your typical burger in a bun—it’s more like a cabbage-infused meat patty or cabbage-stuffed burger baked in the oven.

🧾 Ingredients

For the cabbage filling:

  • 2 cups green cabbage, finely shredded

  • 1 small onion, finely chopped

  • 1 tbsp olive oil or butter

  • 2 cloves garlic, minced

  • Salt and pepper to taste

For the burger mixture:

  • 1 lb (450g) ground beef (or turkey, chicken, or plant-based meat)

  • 1 egg

  • 1/3 cup breadcrumbs (or almond flour for low carb)

  • 2 tbsp ketchup or tomato paste

  • 1 tsp Dijon mustard (optional)

  • 1/2 tsp smoked paprika

  • 1/2 tsp dried thyme or oregano

  • Salt and pepper to taste

Optional toppings:

  • Cheese slices (cheddar, Swiss, etc.)

  • More sautéed cabbage or caramelized onions

  • Buns or lettuce wraps for serving (if desired)


🔪 Instructions

1. Preheat the oven

Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.


2. Prepare the cabbage filling

  1. In a skillet, heat olive oil over medium heat.

  2. Add the chopped onion and cook for 3–4 minutes until softened.

  3. Add garlic and cook for 30 seconds until fragrant.

  4. Add shredded cabbage, a pinch of salt and pepper, and sauté for about 6–8 minutes, or until the cabbage is soft and slightly golden.

  5. Remove from heat and let it cool for a few minutes.


3. Make the burger mixture

  1. In a large bowl, combine ground meat, egg, breadcrumbs, ketchup, mustard, paprika, herbs, and a pinch of salt and pepper.

  2. Add the cooled sautéed cabbage mixture to the bowl.

  3. Mix everything thoroughly until well combined (use clean hands or a spoon).


4. Form the patties

  1. Divide the mixture into 4–6 equal portions.

  2. Shape into thick burger patties (they will shrink a little during baking).

  3. Place them on the prepared baking sheet.


5. Bake the burgers

  1. Place the sheet in the oven and bake for 30–35 minutes, flipping once halfway through (at around 15–18 minutes).

  2. If adding cheese, place a slice on each patty in the last 5 minutes of baking to let it melt.


6. Serve

  • Serve hot on burger buns, in lettuce wraps, or with a side of roasted potatoes, slaw, or a fresh salad.

  • You can also add a dollop of sour cream or spicy mayo on top.

  • Make it vegetarian: Use cooked lentils, beans, or a meatless ground meat substitute.

  • Low-carb option: Skip the breadcrumbs and use almond flour or crushed pork rinds.

  • Add spice: Mix in chopped jalapeños or a pinch of chili flakes to the meat.

  • Meal prep: These burgers store well in the fridge for up to 4 days or can be frozen for up to 2 months.
