Here’s a One-Pot Macaroni Cheeseburger Soup recipe that’s hearty, cheesy, and easy to make. It’s perfect for a cozy dinner and comes together quickly in just one pot — minimal cleanup!

📝 Ingredients:

  • 1 lb (450g) ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 cups beef broth

  • 1 (14.5 oz) can diced tomatoes, undrained

  • 1 cup milk

  • 2 cups elbow macaroni (uncooked)

  • 1 cup shredded cheddar cheese (plus extra for garnish)

  • 1/2 cup cream cheese (optional, for extra creaminess)

  • 1/2 tsp paprika

  • 1/2 tsp mustard powder (or 1 tsp yellow mustard)

  • Salt and pepper, to taste

  • 1 tbsp olive oil or butter

  • Chopped parsley or green onions, for garnish (optional)


👩‍🍳 Instructions:

  1. Sauté beef and aromatics:

    • In a large pot or Dutch oven, heat olive oil over medium heat.

    • Add ground beef and cook until browned, breaking it up with a spoon.

    • Drain excess fat if needed.

    • Add diced onion and garlic, sauté for 2–3 minutes until softened.

  2. Add liquids and seasoning:

    • Stir in the beef broth, diced tomatoes (with their juice), milk, paprika, mustard powder, salt, and pepper.

    • Bring to a gentle boil.

  3. Cook the pasta:

    • Add the uncooked elbow macaroni.

    • Reduce heat to a simmer, cover, and cook for about 10–12 minutes or until the pasta is tender, stirring occasionally to prevent sticking.

  4. Add cheeses:

    • Stir in cheddar cheese and cream cheese (if using) until melted and fully incorporated.

    • Simmer uncovered for a few minutes to thicken slightly.

  5. Taste and adjust:

    • Add more salt, pepper, or cheese as needed.

  6. Serve:

    • Ladle into bowls, top with extra shredded cheese and a sprinkle of parsley or green onion if desired.


✅ Tips:

  • Want it spicier? Add a pinch of chili flakes or a dash of hot sauce.

  • Swap ground beef for ground turkey or chicken for a leaner version.

  • You can add a handful of frozen corn or peas in the last few minutes for added veggies.
