Old Fashioned Chocolate Pie with Golden Meringue

Here’s a classic recipe for Old-Fashioned Chocolate Pie with Golden Meringue. It’s a rich, creamy chocolate filling with a fluffy meringue topping. This dessert is a delicious treat for any occasion!

Ingredients:

For the Chocolate Filling:

  • 1 1/2 cups whole milk

  • 1/2 cup heavy cream

  • 3/4 cup granulated sugar

  • 1/4 cup unsweetened cocoa powder (preferably Dutch-processed)

  • 1/4 cup cornstarch

  • 1/2 teaspoon salt

  • 4 large egg yolks

  • 2 tablespoons unsalted butter

  • 1 1/2 teaspoons vanilla extract

For the Meringue:

  • 4 large egg whites, at room temperature

  • 1/2 teaspoon cream of tartar

  • 1/4 cup granulated sugar

  • 1 teaspoon vanilla extract

For the Pie Crust:

  • 1 pre-baked pie crust (you can use a store-bought crust or make your own)


Instructions:

1. Prepare the Chocolate Filling:

  1. In a medium saucepan, whisk together the milk, cream, sugar, cocoa powder, cornstarch, and salt.

  2. Place the saucepan over medium heat, whisking constantly to prevent lumps from forming. Continue cooking and whisking until the mixture begins to thicken and comes to a gentle boil.

  3. In a small bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot chocolate mixture into the egg yolks, whisking constantly to temper them (this prevents the yolks from scrambling).

  4. Gradually add the egg mixture back into the saucepan with the rest of the chocolate mixture, whisking constantly. Cook for another 1-2 minutes, until the filling is thick and smooth.

  5. Remove from heat and stir in the butter and vanilla extract until smooth.

  6. Pour the chocolate filling into the pre-baked pie crust. Set aside while you prepare the meringue.

2. Prepare the Meringue:

  1. In a clean, dry mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.

  2. Add the cream of tartar and continue beating until the peaks stiffen. Gradually add the sugar, a tablespoon at a time, until the meringue is glossy and stiff.

  3. Add the vanilla extract and beat just to combine.

3. Assemble the Pie:

  1. Spoon the meringue over the chocolate filling, spreading it all the way to the edges of the crust to seal it completely. This helps prevent the meringue from shrinking during baking.

  2. Use the back of a spoon to create soft peaks or swirls in the meringue for a pretty golden top.

4. Bake:

  1. Preheat the oven to 350°F (175°C).

  2. Bake the pie for about 12-15 minutes, or until the meringue is golden brown.

  3. Remove the pie from the oven and let it cool completely on a wire rack. The filling will set as it cools.

5. Serve:

  • Once the pie has cooled, slice and serve. It’s delicious on its own, or with a dollop of whipped cream!
