Here’s a classic, chewy, and sweet Oatmeal Scotchies recipe a nostalgic treat made with oats and rich butterscotch chips. These cookies are buttery, slightly crisp on the edges, and soft in the center. A perfect twist on traditional oatmeal cookies!

🍪 Oatmeal Scotchies Recipe

🧾 Ingredients (Makes about 2 dozen cookies):

  • 1 cup (2 sticks) unsalted butter, softened

  • ¾ cup brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1½ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon (optional, but recommended)

  • 3 cups old-fashioned rolled oats

  • 1½ cups butterscotch chips

👨‍🍳 Instructions

1. Preheat the Oven

  • Preheat your oven to 350°F (175°C).

  • Line baking sheets with parchment paper or silicone baking mats.

2. Cream the Butter and Sugars

  • In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).

3. Add Eggs and Vanilla

  • Mix in eggs one at a time.

  • Add vanilla extract and mix until combined.

4. Combine Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.

5. Mix Wet and Dry

  • Gradually mix the dry ingredients into the wet mixture.

6. Add Oats and Butterscotch Chips

  • Stir in oats and butterscotch chips by hand or on low speed until evenly distributed.

7. Scoop and Bake

  • Drop rounded tablespoons or use a cookie scoop onto the prepared baking sheets, about 2 inches apart.

  • Bake for 10–12 minutes, or until edges are golden and centers are just set.

8. Cool

  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

✅ Tips:

  • For extra chewy cookies, underbake slightly and let them finish on the baking sheet.

  • Add a pinch of nutmeg or coconut flakes for a flavor twist.

  • Store in an airtight container for up to 1 week, or freeze for longer storage.
