Oatmeal Raisin Cookie Bars

Here’s a delicious recipe for Oatmeal Raisin Cookie Bars—they’re soft, chewy, and full of that classic oatmeal-raisin flavor. Perfect for a quick treat!

Ingredients:

  • 1 cup unsalted butter (softened)

  • 1 cup packed brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp ground cinnamon

  • 1/4 tsp salt

  • 3 cups old-fashioned rolled oats

  • 1 cup raisins (or more if you like!)

  • Optional: 1/2 cup chopped nuts (walnuts, pecans, etc.)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.

  2. Cream the butter and sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until smooth and fluffy (about 2-3 minutes). You can do this with an electric mixer or by hand with a whisk.

  3. Add the eggs and vanilla: Beat in the eggs, one at a time, and then stir in the vanilla extract until fully combined.

  4. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Slowly add this mixture to the wet ingredients, stirring until just combined.

  5. Fold in the oats and raisins: Stir in the oats, raisins, and any optional nuts you’re using. Mix until everything is evenly distributed.

  6. Bake: Spread the dough evenly in the prepared baking pan. Bake for 25-30 minutes or until the bars are golden brown and a toothpick inserted into the center comes out clean or with just a few crumbs.

  7. Cool and cut: Allow the bars to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely. Once cool, cut them into squares or bars.
