Oatmeal Raisin Cookie Bars

Ingredients:

  • 1 cup (2 sticks) unsalted butter, melted

  • 1 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3 cups old-fashioned rolled oats

  • 1 1/2 cups raisins

  • Optional: 1 teaspoon ground cinnamon for extra flavor

Instructions:

  1. Preheat oven: to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

  2. Mix wet ingredients: In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla, mixing until combined.

  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).

  4. Mix dry and wet: Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  5. Add oats and raisins: Fold in the oats and raisins evenly.

  6. Bake: Spread the batter evenly in the prepared pan. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.

  7. Cool and slice: Let cool completely in the pan before cutting into bars.
