Here’s a simple, delicious No-Boil Broccoli Pasta Bake recipe that skips the boiling step by baking the pasta directly with enough liquid. Perfect for a fuss-free, cozy meal!


No-Boil Broccoli Pasta Bake

Servings: 4-6
Prep Time: 10 minutes
Cook Time: 35-40 minutes


Ingredients:

  • 12 oz (340g) uncooked pasta (penne, rigatoni, or shells work well)

  • 2 cups fresh broccoli florets (small pieces)

  • 3 cups shredded mozzarella cheese (divided)

  • 1 cup grated Parmesan cheese (divided)

  • 3 cups milk (whole or 2%)

  • 1 cup heavy cream or half-and-half

  • 2 cloves garlic, minced

  • 1 tsp dried Italian seasoning (or oregano + basil)

  • 1/2 tsp crushed red pepper flakes (optional)

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 2 tbsp olive oil or butter

  • 1 tbsp all-purpose flour

  • Optional: 1 cup cooked chicken or sausage, chopped (if you want to add protein)


Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.

  2. Sauté garlic: In a medium saucepan, heat olive oil or butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.

  3. Make the sauce: Sprinkle flour over the garlic and stir to combine. Cook 1-2 minutes, stirring constantly. Slowly whisk in milk and cream until smooth. Add Italian seasoning, salt, pepper, and red pepper flakes (if using). Cook, stirring occasionally, until the sauce thickens slightly, about 5 minutes.

  4. Assemble the bake: In the greased baking dish, combine uncooked pasta, broccoli florets, half the mozzarella, half the Parmesan, and optional cooked protein. Pour the sauce evenly over the top and stir to mix.

  5. Top it off: Sprinkle remaining mozzarella and Parmesan evenly on top.

  6. Bake uncovered for 35-40 minutes, or until pasta is tender and the top is golden and bubbly. If it looks dry, add a splash of milk halfway through baking.

  7. Let cool for 5 minutes before serving.


Tips:

  • Use small broccoli florets so they cook through during baking.

  • Stir halfway through baking for even cooking.

  • You can swap mozzarella for cheddar or fontina for different flavor profiles.

  • Add some breadcrumbs on top in the last 10 minutes for a crunchy topping.
