Ingredients:

For the crust:

  • 2 cups graham cracker crumbs

  • 1/2 cup unsalted butter, melted

  • 1/4 cup granulated sugar

For the cheesecake filling:

  • 16 oz (2 packages) cream cheese, softened

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 1/2 cups heavy whipping cream

For the strawberry topping:

  • 2 cups fresh strawberries, hulled and sliced

  • 1/4 cup granulated sugar

  • 1 tbsp lemon juice

  • Optional: 1 tbsp cornstarch (for thickening, if desired)


Instructions:

1. Make the crust:

  • In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.

  • Press firmly into the bottom of a 9×9-inch pan lined with parchment paper.

  • Chill in the fridge while you prepare the filling.

2. Prepare the strawberry topping:

  • In a saucepan, combine sliced strawberries, sugar, and lemon juice.

  • Cook over medium heat for about 5–7 minutes until strawberries release juice and soften.

  • Optional: mix cornstarch with a little water and stir in to thicken. Let cool completely.

3. Make the cheesecake filling:

  • In a large bowl, beat cream cheese until smooth.

  • Add powdered sugar and vanilla, beat until creamy.

  • In a separate bowl, whip heavy cream until stiff peaks form.

  • Gently fold whipped cream into the cream cheese mixture.

4. Assemble the bars:

  • Spread cheesecake filling evenly over the chilled crust.

  • Spoon the cooled strawberry topping over the cheesecake layer, spreading gently.

5. Chill:

  • Refrigerate for at least 4 hours or overnight until set.

6. Serve:

  • Cut into bars and enjoy chilled!

  • For extra texture, sprinkle chopped nuts or crushed graham crackers on top.

  • Swap strawberries for blueberries or mixed berries for variation.
