No Bake Salted Caramel Cookies

Here’s a delicious and easy No-Bake Salted Caramel Cookies recipe — perfect when you want a quick treat without turning on the oven.


🍪 No-Bake Salted Caramel Cookies

🕒 Ready in: 20 minutes + cooling time

🍽️ Yields: 24 cookies


Ingredients:

  • 1/2 cup (1 stick) unsalted butter

  • 1 cup brown sugar, packed

  • 1/4 cup milk

  • 1/4 cup caramel sauce (store-bought or homemade)

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon sea salt (plus more for topping)

  • 2 1/2 cups quick oats

  • Optional: 1/2 cup chopped pecans or mini chocolate chips


Instructions:

  1. Prepare a baking sheet:
    Line it with parchment paper or a silicone baking mat.

  2. Make the caramel base:
    In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, milk, and caramel sauce. Bring to a gentle boil and cook for 1–2 minutes, stirring constantly.

  3. Add flavoring:
    Remove from heat. Stir in the vanilla extract and sea salt.

  4. Mix oats and extras:
    Stir in the oats (and optional nuts/chocolate chips, if using) until everything is well coated.

  5. Form cookies:
    Use a spoon or cookie scoop to drop rounded spoonfuls onto the prepared baking sheet. Flatten slightly with the back of the spoon.

  6. Finish with salt:
    While still warm, sprinkle a pinch of flaky sea salt on top of each cookie for that salted caramel hit.

  7. Cool and set:
    Let the cookies cool at room temperature for 30–45 minutes, or until firm.


Tips:

  • For chewier cookies, use old-fashioned oats.

  • For a nutty twist, toast chopped pecans or almonds before mixing in.

  • Store in an airtight container for up to 5 days (room temp) or 10 days (refrigerated).
