1 cup of fresh nettle leaves (young, tender ones are best)

1 cup of sugar (you can adjust based on your sweetness preference)

Zest and juice of 1 lemon

1-2 slices of fresh ginger (optional, for an added flavor kick)
Instructions:

Prepare the Nettles:

Carefully wash the nettle leaves to remove any dirt or bugs. Use gloves when handling them to avoid getting stung.

You can use a pair of scissors to snip the nettles from their stems.

Make the Infusion:

Bring the water to a boil in a small saucepan.

Once boiling, add the nettle leaves and ginger (if using), and simmer for 5-10 minutes to extract the nettleās nutrients and flavor.

Strain the Liquid:

Strain the nettle mixture through a fine sieve or cheesecloth into a clean bowl. Discard the nettles and ginger slices.

Make the Syrup:

Return the strained liquid to the saucepan and add the sugar. Stir until it dissolves completely, then bring the mixture to a simmer over medium heat. Allow it to simmer for 10-15 minutes or until the syrup thickens slightly.

Once the syrup has reached your desired consistency, remove it from the heat. Add the lemon juice and zest, stirring to combine.
