Here’s a  recipe for Moelleux aux Pommes Sans Sucres Ajoutés (Apple Moist Cake without Added Sugar). This is a healthy, naturally sweetened dessert perfect for those who want to avoid added sugars but still enjoy a soft, moist apple cake.


Moelleux aux Pommes Sans Sucres Ajoutés

Ingredients:

  • 3 medium apples (preferably sweet varieties like Gala, Fuji, or Golden Delicious)

  • 3 large eggs

  • 100g whole wheat flour (or all-purpose flour)

  • 50g almond flour (optional, adds moisture and flavor)

  • 1 tsp baking powder

  • 1 tsp cinnamon powder (optional, for extra flavor)

  • 1 tsp vanilla extract

  • 60ml unsweetened applesauce (acts as natural sweetener and moisture)

  • 60ml plain yogurt or Greek yogurt (for moisture)

  • 30ml olive oil or melted coconut oil

  • A pinch of salt

  • Zest of 1 lemon (optional, for freshness)


Instructions:

  1. Prepare the apples:

    • Peel, core, and finely chop or grate 2 apples.

    • Thinly slice the 3rd apple for layering or decoration on top.

  2. Preheat your oven:

    • Set the oven to 180°C (350°F).

    • Grease a round cake tin (20 cm diameter) or line it with parchment paper.

  3. Mix the wet ingredients:

    • In a large bowl, whisk the eggs until light and frothy.

    • Add the applesauce, yogurt, oil, vanilla extract, and lemon zest.

    • Mix well until smooth and combined.

  4. Prepare the dry ingredients:

    • In another bowl, sift together the flour(s), baking powder, cinnamon, and salt.

  5. Combine wet and dry:

    • Gradually fold the dry ingredients into the wet mixture.

    • Stir gently to avoid overmixing, until just combined.

  6. Add the chopped apples:

    • Fold the grated/chopped apples into the batter.

  7. Pour and decorate:

    • Pour the batter into the prepared tin.

    • Arrange the sliced apples on top in a decorative pattern.

  8. Bake:

    • Place in the oven and bake for about 35-40 minutes.

    • Check doneness by inserting a toothpick in the center—it should come out clean or with just a few moist crumbs.

  9. Cool:

    • Let the cake cool in the tin for 10 minutes.

    • Transfer to a wire rack to cool completely.


Tips:

  • The applesauce adds natural sweetness and moisture. Use unsweetened varieties to keep sugar low.

  • You can replace some of the flour with oat flour or spelt flour for a different texture.

  • For extra flavor, add a handful of chopped nuts or raisins (unsweetened).

  • Serve with a dollop of Greek yogurt or a sprinkle of cinnamon on top.
