Here’s a Mini Fluffy Pancakes recipe that’s quick, easy, and perfect for breakfast or brunch:


πŸ₯ž Mini Fluffy Pancakes

Ingredients (makes about 25 mini pancakes):

  • 1 cup (125g) all-purpose flour

  • 2 tbsp granulated sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup (180ml) buttermilk (or milk + 1 tsp vinegar/lemon juice)

  • 1 large egg

  • 2 tbsp melted butter (plus more for cooking)

  • 1 tsp vanilla extract

Optional Toppings:

  • Maple syrup

  • Fresh berries

  • Whipped cream

  • Nutella or chocolate sauce

  • Powdered sugar

  1. Mix Dry Ingredients
    In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. Mix Wet Ingredients
    In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

  3. Combine
    Pour the wet mixture into the dry ingredients and stir until just combined. Don’t overmix β€” a few lumps are fine.

  4. Preheat and Cook
    Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
    Drop small spoonfuls (about 1 tablespoon each) of batter onto the pan. Cook for about 1–2 minutes, until bubbles form and edges look set. Flip and cook another 30–60 seconds.

  5. Serve
    Stack them up, add your favorite toppings, and enjoy!
