Mediterranean Salmon Patties
Ingredients:

2 cans (about 14-15 oz each) salmon, drained and flaked (or use fresh cooked salmon, about 1 lb)

1/2 cup breadcrumbs (panko or regular)

1/4 cup finely chopped red onion

1/4 cup finely chopped bell pepper (red or green)

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1/4 cup crumbled feta cheese

1 tablespoon capers, drained and chopped (optional)

1 teaspoon dried oregano

1/2 teaspoon ground cumin (optional)

1 large egg, beaten

Juice of 1/2 lemon
