Mediterranean Salmon Patties

Here’s a delicious Mediterranean Salmon Patties recipe for you! They’re flavorful, easy to make, and perfect as a main or appetizer.


Mediterranean Salmon Patties

Ingredients:

  • 2 cans (about 14-15 oz each) salmon, drained and flaked (or use fresh cooked salmon, about 1 lb)

  • 1/2 cup breadcrumbs (panko or regular)

  • 1/4 cup finely chopped red onion

  • 1/4 cup finely chopped bell pepper (red or green)

  • 1/4 cup chopped fresh parsley

  • 2 cloves garlic, minced

  • 1/4 cup crumbled feta cheese

  • 1 tablespoon capers, drained and chopped (optional)

  • 1 teaspoon dried oregano

  • 1/2 teaspoon ground cumin (optional)

  • 1 large egg, beaten

  • Juice of 1/2 lemon

  • Salt and pepper to taste

  • Olive oil for frying


Instructions:

  1. In a large bowl, combine the flaked salmon, breadcrumbs, red onion, bell pepper, parsley, garlic, feta, capers, oregano, cumin, and beaten egg.

  2. Add lemon juice and season with salt and pepper. Mix everything gently until well combined. If the mixture feels too wet, add a bit more breadcrumbs.

  3. Shape the mixture into patties (about 8 medium-sized).

  4. Heat a couple of tablespoons of olive oil in a large skillet over medium heat.

  5. Cook the patties for about 4-5 minutes per side, or until golden brown and cooked through.

  6. Serve warm with a side of tzatziki, Greek yogurt, or a fresh salad.
