Mediterranean Ricotta & Pita Board

Here’s a delicious Mediterranean Ricotta & Pita Board recipe for you! It’s perfect for a light snack, appetizer, or party platter.


Mediterranean Ricotta & Pita Board

Ingredients:

  • Ricotta cheese – 1 cup (whole milk ricotta is best)

  • Extra virgin olive oil – 2-3 tbsp

  • Lemon zest – from 1 lemon

  • Fresh herbs (such as basil, mint, oregano, or parsley) – a handful, chopped

  • Za’atar seasoning – 1 tsp (optional)

  • Honey – 1-2 tbsp

  • Cherry tomatoes – 1 cup, halved

  • Cucumber – 1 small, sliced or cut into sticks

  • Kalamata olives – ½ cup

  • Roasted red peppers – ½ cup, sliced

  • Pita bread – 4-6 pieces, cut into triangles

  • Salt & pepper – to taste

  • Optional extras: toasted pine nuts, crushed red pepper flakes, sliced radishes, or pickled vegetables


Instructions:

  1. Prepare the ricotta spread:

    • In a bowl, combine the ricotta cheese with 1 tablespoon of olive oil, lemon zest, chopped fresh herbs, salt, and pepper.

    • Mix gently until smooth and creamy.

  2. Arrange the board:

    • Spread the ricotta mixture in a shallow dish or bowl.

    • Drizzle a little olive oil and honey over the ricotta.

    • Sprinkle za’atar seasoning on top for an authentic Mediterranean flavor.

    • Arrange cherry tomatoes, cucumber slices, olives, roasted red peppers, and any other veggies or extras around the ricotta.

  3. Toast or warm the pita:

    • Warm pita triangles in the oven at 350°F (175°C) for about 5 minutes or toast them lightly in a skillet until they’re crisp but still soft inside.

  4. Serve:

    • Place the pita triangles on the board for dipping.

    • Add any extra olive oil or honey on the side if desired.

    • Enjoy scooping up the ricotta and fresh veggies with pita!
