Mashed Potato Pancakes with Meat Filling

Ingredients

For the mashed potato pancakes:

  • 3 cups mashed potatoes (preferably cold or leftover)

  • 1 large egg

  • 1/2 cup all-purpose flour (plus more for dusting)

  • 1/4 cup finely chopped onion (optional)

  • Salt and pepper to taste

  • Oil for frying

For the meat filling:

  • 1/2 lb (about 250g) ground beef, pork, or a mix

  • 1 small onion, finely chopped

  • 1 garlic clove, minced

  • Salt and pepper to taste

  • 1/2 tsp paprika or cumin (optional)

  • 1 tbsp oil for cooking meat


Instructions

  1. Prepare the meat filling:

    • Heat 1 tbsp oil in a pan over medium heat.

    • Add chopped onion and garlic; sauté until soft and fragrant.

    • Add ground meat, breaking it up with a spoon.

    • Season with salt, pepper, and paprika or cumin if using.

    • Cook until meat is browned and fully cooked.

    • Remove from heat and let it cool slightly.

  2. Prepare the potato pancake batter:

    • In a bowl, mix mashed potatoes, egg, flour, chopped onion (if using), salt, and pepper.

    • The mixture should be soft but hold together when formed. Add more flour if too wet.

  3. Assemble the pancakes:

    • Lightly flour your hands.

    • Take about 2-3 tbsp of the potato mixture and flatten it into a small disc in your palm.

    • Place 1-2 tsp of the meat filling in the center.

    • Cover the filling with another 2-3 tbsp of potato mixture and gently seal the edges, shaping into a thick pancake.

    • Repeat with the remaining ingredients.

  4. Cook the pancakes:

    • Heat oil in a frying pan over medium heat.

    • Fry the pancakes for about 3-4 minutes on each side, or until golden brown and crispy.

    • Remove and drain on paper towels.

  5. Serve:

    • Serve warm with sour cream, ketchup, or your favorite dipping sauce.————————–++
