Here’s a rich, elegant Luxury Seafood Bisque recipe that combines crab, shrimp, and lobster for a deeply flavorful, velvety soup — perfect for special occasions or indulgent dining at home.

🧾 Ingredients

Seafood

  • 6 oz lobster meat (tail or claw), chopped

  • 6 oz lump crab meat

  • 6 oz shrimp, peeled, deveined, and chopped

  • Optional: Seafood shells for making a stock

Base

  • 4 tbsp unsalted butter

  • 1 tbsp olive oil

  • 1 small shallot, finely chopped

  • 1 small yellow onion, finely chopped

  • 2 cloves garlic, minced

  • 2 medium carrots, finely chopped

  • 2 ribs celery, finely chopped

  • 1 tbsp tomato paste

  • 1/2 cup dry sherry or white wine

  • 3 tbsp all-purpose flour

  • 3 cups seafood or fish stock (or homemade using shells)

  • 1 cup heavy cream

  • 1 cup whole milk

  • 1/4 tsp cayenne pepper (optional)

  • 1/2 tsp paprika

  • Salt & freshly ground pepper to taste

Garnish

  • Fresh chives or parsley, finely chopped

  • A drizzle of cream or lobster oil


👩‍🍳 Instructions

1. Make the Seafood Stock (Optional)

If using shells:

  • In a pot, sauté shrimp/lobster shells in 1 tbsp butter until pink.

  • Add a chopped onion, celery stalk, and carrot.

  • Cover with 4 cups water, bring to a boil, then simmer for 30–45 minutes.

  • Strain and reserve liquid as stock.

2. Sauté the Aromatics

  • In a large saucepan or Dutch oven, melt 4 tbsp butter with 1 tbsp olive oil.

  • Add chopped onion, shallot, celery, and carrots. Sauté for 6–8 minutes until soft.

  • Stir in garlic and tomato paste. Cook 1–2 minutes until fragrant.

3. Deglaze and Thicken

  • Add the flour and stir for 2 minutes to cook off the raw taste.

  • Slowly pour in sherry (or wine), scraping up bits from the pan.

  • Gradually add stock while whisking to prevent lumps.

  • Simmer for 20 minutes uncovered, allowing flavors to blend.

4. Blend for Smoothness

  • Use an immersion blender to purée the mixture until smooth, or blend in batches using a countertop blender (be careful with hot liquids).

  • Return to pot. Stir in cream, milk, paprika, cayenne, salt, and pepper.

5. Add Seafood

  • Add shrimp and lobster first; cook gently for 5–6 minutes until just done.

  • Stir in crab meat last, cooking for another 2–3 minutes.

  • Do not boil — keep it at a gentle simmer.

6. Serve

  • Ladle into bowls. Garnish with fresh chives, a drizzle of cream, or lobster oil.


🔥 Tips for Extra Luxury

  • Add a splash of cognac or brandy before blending for depth.

  • Serve with toasted baguette slices or puff pastry rounds.

  • For a richer bisque, replace some of the milk with more cream.
