Here’s a cozy and creamy Low Cooker Cheesy Potato & Broccoli Soup recipe that’s easy to make and full of flavor!

Ingredients:

  • 6 medium potatoes, peeled and diced (about 6 cups)

  • 4 cups broccoli florets (fresh or frozen)

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 4 cups chicken or vegetable broth

  • 2 cups shredded cheddar cheese

  • 1 cup half-and-half (or heavy cream for a richer soup)

  • 2 tablespoons butter

  • 1 teaspoon salt, or to taste

  • ½ teaspoon black pepper

  • ¼ teaspoon garlic powder (optional, for extra flavor)

  • 1 tablespoon cornstarch (optional, to thicken if needed)

Instructions:

  1. Prep the Ingredients:

    • Peel and dice the potatoes. If using fresh broccoli, chop into small florets. Mince the garlic and chop the onion.

  2. Layer the Ingredients in the Slow Cooker:

    • Add the diced potatoes, broccoli, chopped onion, minced garlic, and broth to the slow cooker.

    • Season with salt, pepper, and garlic powder (if using). Stir everything together.

  3. Cook:

    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and the broccoli is cooked through.

  4. Mash the Potatoes:

    • Once cooked, use a potato masher to mash some of the potatoes in the soup for a creamier texture, leaving some pieces for a bit of chunkiness.

  5. Make it Creamy:

    • Add the butter, half-and-half (or heavy cream), and shredded cheddar cheese to the soup.

    • Stir until the cheese is fully melted and everything is combined.

  6. Optional – Thicken the Soup:

    • If you want a thicker soup, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir it into the soup. Let it cook for another 20-30 minutes to thicken.

  7. Serve:

    • Taste the soup and adjust the seasoning, adding more salt or pepper if needed.

    • Ladle into bowls and optionally top with extra shredded cheese or a sprinkle of fresh herbs.

Tips:

  • Add-ins: You can stir in some crumbled bacon or cooked sausage for added protein.

  • For a spicy kick: Add a pinch of cayenne pepper or a few dashes of hot sauce to spice things up.

  • Vegan Version: Use dairy-free cheese and plant-based cream to make it vegan-friendly!
