Louisiana Vodoo Fries

🧂 Ingredients

For the Fries:

  • 1 pound frozen French fries (or 4 large russet potatoes, cut into strips)

  • 1 tablespoon Cajun seasoningI Am Homesteader

For the Cheese Sauce:

  • 1 tablespoon unsalted butter

  • 1 tablespoon all-purpose flour

  • ¾ cup whole milk

  • ½ cup shredded sharp cheddar cheese

  • ½ cup shredded pepper jack cheese

  • ½ teaspoon Cajun seasoning

  • ½ teaspoon garlic powder

  • Pinch of paprika

Optional Toppings:

  • 6 slices thick-cut bacon, cooked and crumbled

  • 1 large jalapeño, seeded and diced

  • ¼ cup green onions, sliced

👩‍🍳 Instructions

  1. Prepare the Fries:

    • Bake frozen fries according to package instructions until golden and crispy. If using fresh-cut potatoes, blanch them in boiling water for 2–3 minutes, drain, and pat dry. Then, fry in heated oil at 350°F until golden and crispy.

  2. Make the Cheese Sauce:

    • In a saucepan over medium heat, melt butter. Whisk in flour and cook for about 30 seconds.

    • Slowly add milk while whisking constantly to avoid lumps. Stir until the mixture thickens and becomes smooth, about 2–3 minutes.

    • Stir in Cajun seasoning, garlic powder, and paprika.

    • Remove from heat and gradually add the shredded cheddar and pepper jack cheeses, stirring until melted and smooth. If the sauce is too thick, add more milk, 1 tablespoon at a time, until the desired consistency is reached. I Am Homesteader

  3. Assemble the Voodoo Fries:

    • Place the seasoned fries on a serving platter.

    • Drizzle with the warm cheese sauce.

    • Top with crumbled bacon, diced jalapeños, and sliced green onions.
