Prepare the Fries:

Bake frozen fries according to package instructions until golden and crispy. If using fresh-cut potatoes, blanch them in boiling water for 2–3 minutes, drain, and pat dry. Then, fry in heated oil at 350°F until golden and crispy.

Make the Cheese Sauce:

In a saucepan over medium heat, melt butter. Whisk in flour and cook for about 30 seconds.

Slowly add milk while whisking constantly to avoid lumps. Stir until the mixture thickens and becomes smooth, about 2–3 minutes.
