Long John Silver’s Batter

🍤 Long John Silver’s Batter (Copycat Recipe)

Ingredients:

  • ¾ cup all-purpose flour

  • 2 tablespoons cornstarch

  • ¼ teaspoon baking soda

  • ¼ teaspoon baking powder

  • ½ teaspoon salt

  • ½ teaspoon sugar

  • ½ cup cold water (or club soda for extra crispiness)

  • 1/8 teaspoon onion powder (optional for flavor)

  • 1/8 teaspoon paprika (optional for color and taste)

Instructions:

  1. Mix Dry Ingredients
    In a medium bowl, whisk together the flour, cornstarch, baking soda, baking powder, salt, sugar, and optional spices.

  2. Add Cold Water
    Slowly add the cold water (or club soda), stirring until you get a smooth, pancake-batter-like consistency. It should be thick enough to coat the back of a spoon.

  3. Rest (Optional but Recommended)
    Let the batter sit for 10–15 minutes to relax the gluten and allow the bubbles to work — this helps make the coating lighter and crispier.

  4. Heat Oil
    Heat oil to 350–375°F (175–190°C) in a deep fryer or deep skillet.

  5. Batter and Fry
    Dip fish or chicken into the batter, shake off excess, and carefully lower into the hot oil. Fry until golden brown and crispy — about 3–5 minutes depending on the size of the pieces.

  6. Drain and Serve
    Drain on paper towels or a wire rack. Serve with tartar sauce, vinegar, or your favorite sides.
