Limoncello Mascarpone Dream Cake

Here’s a delicious Limoncello Mascarpone Dream Cake recipe — a light, zesty, and creamy dessert that’s perfect for summer or special occasions.


🍋 Limoncello Mascarpone Dream Cake

Ingredients

For the Cake:
  • 1 ½ cups (180g) all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup (1 stick / 113g) unsalted butter, softened

  • 1 cup (200g) granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • 2 tbsp lemon zest (about 2 lemons)

  • ⅓ cup fresh lemon juice

  • ¼ cup Limoncello

  • ½ cup buttermilk or Greek yogurt

For the Mascarpone Filling:
  • 8 oz (225g) mascarpone cheese, room temperature

  • 1 cup (240 ml) heavy cream, cold

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • 1–2 tbsp Limoncello (optional)

For the Limoncello Syrup:
  • ¼ cup Limoncello

  • 2 tbsp water

  • 2 tbsp sugar

Optional Topping:
  • Whipped cream

  • Fresh berries (e.g., blueberries, raspberries)

  • Lemon zest curls or candied lemon peel


Instructions

1. Bake the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch (or 9-inch) round cake pans.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In a large bowl, cream butter and sugar until light and fluffy (about 2–3 minutes).

  4. Add eggs one at a time, beating well after each. Stir in vanilla and lemon zest.

  5. Mix in lemon juice and Limoncello.

  6. Alternately add the dry ingredients and buttermilk/yogurt, starting and ending with the dry.

  7. Divide batter evenly between pans and bake 20–25 minutes, or until a toothpick comes out clean.

  8. Cool in pans for 10 minutes, then remove to racks to cool completely.

2. Make the Syrup:

  1. In a small saucepan, combine Limoncello, water, and sugar. Heat just until sugar dissolves.

  2. Set aside to cool.

3. Make the Mascarpone Filling:

  1. Beat mascarpone with powdered sugar and vanilla until smooth.

  2. Gradually add Limoncello (optional) and beat until blended.

  3. In a separate bowl, whip cold heavy cream until stiff peaks form.

  4. Gently fold whipped cream into mascarpone mixture until smooth.

4. Assemble the Cake:

  1. Trim tops of cake layers if needed.

  2. Place first layer on a serving plate. Brush generously with Limoncello syrup.

  3. Spread half the mascarpone cream over the cake.

  4. Place second layer on top. Brush with syrup again.

  5. Spread remaining cream on top (and sides, if desired).

5. Decorate & Chill:

  • Chill for at least 2 hours before serving.

  • Garnish with berries, whipped cream, lemon zest, or powdered sugar.
