Light Lemon Herb Dressing
Ingredients:

3 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard (optional, for a bit of tang and emulsification)

1 teaspoon honey or maple syrup (optional, for a touch of sweetness)

1 small garlic clove, minced

1 tablespoon fresh chopped herbs (parsley, basil, dill, or a mix)

Salt and freshly ground black pepper, to taste
Instructions:

In a small bowl, whisk together the lemon juice, Dijon mustard, honey, and minced garlic.

Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.

Stir in the chopped herbs.

Season with salt and pepper to taste.
