🍗 Lemon & Garlic Chicken Bites

Ingredients:

1 lb (450g) chicken breast or thighs, cut into bite-sized pieces

3 cloves garlic, minced

2 tbsp olive oil

Zest and juice of 1 lemon

1 tsp dried oregano (or Italian seasoning)

½ tsp paprika (optional, for color)

Salt & pepper to taste

Fresh parsley (for garnish)

Lemon wedges (for serving)
Instructions:

Prep the Chicken:
Cut the chicken into 1–1.5 inch pieces. Pat dry with a paper towel. -
Marinate (optional but recommended):
In a bowl, mix olive oil, lemon zest, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken, toss to coat, and marinate for 15–30 minutes (or up to 8 hours in the fridge). -
Cook:
Heat a skillet over medium-high heat. Add a little oil if needed.
Sear the chicken in a single layer (work in batches if needed) for 3–4 minutes per side until golden brown and cooked through (internal temp: 165°F / 74°C). -
Serve:
Sprinkle with chopped parsley and serve with lemon wedges.
