Here’s a simple and delicious recipe for Lazy Day Lemon Cream Pie Bars — perfect for when you want something sweet with minimal effort!


🍋 Lazy Day Lemon Cream Pie Bars

Ingredients

For the crust:

  • 1 box yellow cake mix (15.25 oz)

  • 1/3 cup butter, melted

  • 1 large egg

For the filling:

  • 1 (14 oz) can sweetened condensed milk

  • 1/2 cup lemon juice (fresh or bottled)

  • 1 tablespoon lemon zest (optional, but adds great flavor)

  • 1 large egg yolk

Optional Topping:

  • Powdered sugar, for dusting

  • Whipped cream or Cool Whip


Instructions

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C).

    • Grease or line an 8×8 or 9×9-inch baking dish with parchment paper.

  2. Make the crust:

    • In a medium bowl, mix the cake mix, melted butter, and egg until a soft dough forms.

    • Press about 2/3 of the dough into the bottom of the prepared pan. Reserve the remaining dough for topping.

  3. Make the filling:

    • In another bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and egg yolk until smooth.

    • Pour the lemon filling over the crust and spread evenly.

  4. Add the topping:

    • Crumble the reserved dough over the lemon filling.

  5. Bake:

    • Bake for 25–30 minutes, or until the top is lightly golden and the center is set (it might still jiggle slightly).

    • Let it cool at room temperature, then refrigerate for at least 1 hour before cutting.

  6. Serve:

    • Dust with powdered sugar before serving if desired.

    • Cut into bars and enjoy chilled or at room temperature.


📝 Tips:

  • For a tangier flavor, increase the lemon juice slightly or add extra zest.

  • Bars will firm up more once chilled — they’re best after a few hours in the fridge.
