Here’s a recipe to replicate the KFC-style coleslaw at home. This version is very close in flavor and texture to the original β€” creamy, tangy, slightly sweet, and finely chopped.

Vegetables:

  • 8 cups finely chopped cabbage (about 1 medium head)

  • 1/4 cup finely chopped carrots

  • 2 tablespoons finely chopped onion (optional, but authentic to KFC)

Dressing:

  • 1/2 cup mayonnaise (preferably full-fat)

  • 1/4 cup buttermilk

  • 1/4 cup whole milk

  • 1/3 cup granulated sugar

  • 1/4 cup white vinegar

  • 2 1/2 tablespoons lemon juice (fresh or bottled)

  • 1/2 teaspoon salt

  • 1/8 teaspoon ground black pepper

  1. Prepare Vegetables:

    • Finely chop the cabbage, carrot, and onion.

    • Mix them in a large mixing bowl.

  2. Make the Dressing:

    • In a separate bowl, whisk together the mayo, buttermilk, milk, sugar, vinegar, lemon juice, salt, and pepper until smooth and well combined.

  3. Combine & Chill:

    • Pour the dressing over the chopped vegetables.

    • Mix thoroughly to ensure everything is evenly coated.

  4. Refrigerate:

    • Cover the bowl and refrigerate for at least 4 hours, ideally overnight. This allows the flavors to meld and the slaw to soften to that signature texture.

  5. Serve Cold:

    • Stir again before serving. Great as a side with fried chicken, sandwiches, or BBQ.

  • Texture is key. KFC coleslaw is very finely chopped β€” almost minced. A food processor with a chopping blade works great.

  • Resting time is essential. It won’t taste right until it’s been chilled for several hours.

  • No purple cabbage. KFC only uses green cabbage for that signature look.
