Ingredients

For the Cake:

  • 1 cup (2 sticks) unsalted butter, softened

  • 2 ½ cups granulated sugar

  • 6 large eggs

  • 3 cups all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 1 cup whole milk

  • ¼ cup key lime juice (fresh or bottled)

  • 1 tablespoon key lime zest

  • 1 teaspoon vanilla extract

For the Key Lime Glaze:

  • 1 ½ cups powdered sugar

  • 3–4 tablespoons key lime juice (adjust for consistency)

  • 1 teaspoon key lime zest (optional, for extra zing)


Instructions

1. Preheat Oven:

Preheat oven to 325°F (163°C). Grease and flour a 10-inch bundt or tube pan.

2. Make the Cake Batter:

  • In a large bowl, cream the butter and sugar together until light and fluffy (about 3–5 minutes).

  • Add the eggs one at a time, beating well after each addition.

  • In a separate bowl, whisk together the flour, baking powder, and salt.

  • In a measuring cup, combine the milk, key lime juice, zest, and vanilla extract.

  • Add the dry ingredients to the butter mixture alternately with the milk mixture, beginning and ending with flour. Mix just until combined.

3. Bake:

Pour the batter into the prepared pan. Bake for 1 hour to 1 hour 15 minutes, or until a toothpick inserted into the center comes out clean.

4. Cool:

Let the cake cool in the pan for 10–15 minutes, then turn it out onto a wire rack to cool completely.

5. Make the Glaze:

In a small bowl, whisk together the powdered sugar and key lime juice until smooth. Add zest if using. Adjust consistency with more juice or sugar as needed.

6. Glaze the Cake:

Once the cake is cool, drizzle the glaze over the top. Let set before slicing.


Optional Garnishes

  • Thin slices of key lime

  • Extra zest on top

  • Whipped cream or fresh berries on the side
