Instant Pot Diet Soup

Here’s a healthy, flavorful Instant Pot Diet Soup recipe that’s perfect for weight loss, meal prep, or just a light meal. It’s low in calories, packed with veggies, and super easy to make.


🌿 Instant Pot Diet Soup (Weight Loss Vegetable Soup)

🍲 Servings: 6–8

⏱️ Total Time: 30 minutes

🥣 Calories: ~100–150 per serving (depending on veggies used)


✅ Ingredients:

  • 1 tablespoon olive oil (optional, or use spray for fewer calories)

  • 1 onion, diced

  • 2–3 garlic cloves, minced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 1 zucchini, chopped

  • 1 bell pepper (any color), chopped

  • 2 cups chopped cabbage (green or red)

  • 1 cup green beans, trimmed and halved

  • 1 can (14.5 oz) diced tomatoes (no salt added)

  • 6 cups vegetable broth (low sodium preferred)

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • 1/2 teaspoon thyme

  • Salt and black pepper, to taste

  • Juice of 1/2 lemon (optional, for brightness)

  • Fresh parsley, chopped (for garnish)


👩‍🍳 Instructions:

  1. Sauté (optional for more flavor)
    Set Instant Pot to Sauté mode. Add olive oil, onion, and garlic. Cook for 2–3 minutes until fragrant.

  2. Add veggies and seasonings
    Add carrots, celery, zucchini, bell pepper, cabbage, and green beans. Stir in the diced tomatoes, broth, herbs, salt, and pepper.

  3. Pressure Cook
    Cancel Sauté mode. Close the lid and set valve to Sealing.
    Select Manual / Pressure Cook and set to 5 minutes on High Pressure.

  4. Natural Release
    Let the pressure release naturally for 5–10 minutes, then do a quick release for remaining pressure.

  5. Finish and Serve
    Stir in lemon juice (optional). Taste and adjust seasoning. Garnish with fresh parsley before serving.


🔁 Variations:

  • Add protein: Shredded chicken, lentils, or white beans.

  • Spice it up: Add chili flakes, hot sauce, or cayenne.

  • Make it hearty: Add cauliflower rice or quinoa before cooking.
