Here’s a Hummingbird Cake Cottage Cheese Bowl recipe that captures the tropical, spiced flavors of traditional hummingbird cake — but in a high-protein, no-bake, quick bowl format using cottage cheese:


🧁 Hummingbird Cake Cottage Cheese Bowl

🥣 Ingredients:

  • ½ cup cottage cheese (full-fat or low-fat based on preference)

  • ½ banana, mashed or sliced

  • 2 tbsp crushed pineapple (drained)

  • 1–2 tbsp chopped pecans or walnuts

  • 1 tbsp unsweetened shredded coconut

  • ½ tsp cinnamon

  • ⅛ tsp nutmeg

  • ½ tsp vanilla extract

  • Optional sweetener: 1–2 tsp maple syrup, honey, or a few drops of stevia

  • Optional toppings: chopped dates or raisins, granola, extra banana or pineapple


👩‍🍳 Instructions:

  1. Blend or mix base
    In a bowl, stir (or blend for a whipped texture) the cottage cheese with vanilla, cinnamon, nutmeg, and sweetener if using.

  2. Add fruit & nuts
    Fold in the banana, crushed pineapple, and half the nuts and coconut.

  3. Top & serve
    Sprinkle remaining nuts and coconut on top. Add optional toppings if desired.

  4. Enjoy immediately
    Or chill for 10–15 minutes for a more “dessert-like” feel.


💡 Tips:

  • For a smoother, cheesecake-like texture, blend the cottage cheese before mixing.

  • Add 1 tbsp of protein powder or Greek yogurt for a protein boost.

  • Use a dash of ginger or allspice to deepen the spice profile.
