🍎 Honeycrisp Apple Salad Recipe

Ingredients

For the Salad:

  • 2 Honeycrisp apples, thinly sliced

  • 5 oz (about 6 cups) mixed greens (spring mix, arugula, or baby spinach)

  • 1/3 cup dried cranberries or cherries

  • 1/3 cup crumbled goat cheese or feta

  • 1/4 cup thinly sliced red onion

  • 1/2 cup candied pecans or walnuts

  • Optional: 1 avocado, sliced

For the Dressing:

  • 1/4 cup olive oil

  • 2 tbsp apple cider vinegar

  • 1 tbsp honey or maple syrup

  • 1 tsp Dijon mustard

  • Salt and freshly ground black pepper to taste


Instructions

  1. Make the Dressing:
    In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper until well combined.

  2. Assemble the Salad:
    In a large salad bowl, combine the mixed greens, sliced apples, cranberries, red onion, and avocado (if using). Gently toss to distribute.

  3. Add Cheese & Nuts:
    Sprinkle the goat cheese and candied nuts over the top.

  4. Dress & Serve:
    Drizzle with dressing just before serving. Toss lightly and serve immediately.

  • Toss the apple slices in a little lemon juice to prevent browning.

  • For protein, top with grilled chicken or chickpeas.

  • Try blue cheese instead of goat cheese for a sharper flavor.
