Homemade Mango Carlota

Here’s a simple and delicious Homemade Mango Carlota recipe – a tropical twist on the classic Mexican icebox cake (also known as Carlota de Limón):


🍰 Homemade Mango Carlota Recipe

Ingredients:

  • 2 ripe mangoes, peeled and cubed (or about 2 cups of mango pulp)

  • 1 can (14 oz) sweetened condensed milk

  • 1 can (12 oz) evaporated milk

  • 1 package (8 oz) cream cheese, softened (optional for creaminess)

  • 1 pack of Maria cookies (or graham crackers as a substitute)

  • Juice of 1 lime (optional, enhances mango flavor)

  • Mango slices or crushed cookies for garnish (optional)


Instructions:

  1. Blend the Filling:

    • In a blender, combine the mango pulp, sweetened condensed milk, evaporated milk, and cream cheese (if using). Add lime juice if desired.

    • Blend until smooth and creamy.

  2. Layer the Carlota:

    • In a rectangular or square glass dish, spread a thin layer of the mango cream on the bottom.

    • Add a layer of Maria cookies, covering the base.

    • Pour a layer of the mango cream over the cookies.

    • Repeat the layers (cookies, cream) until you finish the mixture, ending with a layer of cream.

  3. Chill:

    • Cover and refrigerate for at least 4 hours, or preferably overnight, until set and cookies have softened.

  4. Serve:

    • Garnish with mango slices or crushed cookies before serving.

    • Cut into squares and enjoy cold!


🍴 Tips:

  • You can use frozen mango chunks (thawed) if fresh mangoes are out of season.

  • For extra mango flavor, add a tablespoon of mango jam or puree to the mix.

  • Want it sweeter? Add a little honey or sugar to the blender.
