Grilled Salmon with Pasta & Dinner Roll

Ingredients

For the Grilled Salmon:

  • 2 tablespoons olive oil or butter

  • 2 cloves garlic, minced

  • 1/2 cup cherry tomatoes, halved (optional)

  • 1/4 cup grated Parmesan cheese

  • Salt and pepper, to taste

  • Fresh basil or parsley, chopped (optional)

For the Dinner Rolls:

  • Store-bought or homemade dinner rolls (4 rolls)

  • Butter, for serving


Instructions

1. Prepare the Salmon Marinade and Grill the Salmon:

  1. In a small bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper.

  2. Brush or rub this marinade all over the salmon fillets. Let it marinate for at least 15-20 minutes at room temperature or up to 1 hour in the fridge.

  3. Preheat your grill or grill pan to medium-high heat.

  4. Grill the salmon for about 4-5 minutes per side, depending on thickness, until cooked through and slightly charred on the outside. The internal temperature should reach 145°F (63°C).

  5. Remove from grill and let it rest a few minutes. Garnish with fresh parsley and lemon wedges.

2. Cook the Pasta:

  1. Bring a large pot of salted water to a boil.

  2. Add pasta and cook according to package instructions until al dente.

  3. Drain the pasta, reserving about 1/4 cup pasta water.

  4. In a large skillet, heat olive oil or butter over medium heat.

  5. Add minced garlic and sauté for about 1 minute until fragrant.

  6. Add cherry tomatoes and cook for 2-3 minutes until slightly softened (optional).

  7. Toss in the cooked pasta and add reserved pasta water little by little to loosen the sauce.

  8. Stir in Parmesan cheese, salt, pepper, and fresh herbs if using.

  9. Mix well and remove from heat.

3. Warm the Dinner Rolls:

  • Warm dinner rolls in the oven at 350°F (175°C) for 5-7 minutes or until heated through.

  • Serve with butter on the side.


Serving Suggestions:

  • Place a salmon fillet on a plate, add a generous serving of pasta beside it.

  • Add a warm dinner roll on the side.

  • Garnish with extra lemon wedges and fresh herbs.
