Here’s a flavorful Grilled Ranch Garlic Parmesan Chicken Skewers recipe — perfect for summer grilling or a quick, crowd-pleasing dinner.


Grilled Ranch Garlic Parmesan Chicken Skewers

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes

  • 1/2 cup ranch dressing (bottled or homemade)

  • 3 cloves garlic, minced

  • 1/4 cup grated Parmesan cheese (plus more for garnish)

  • 1 tbsp olive oil

  • 1 tbsp lemon juice (optional, for a zesty kick)

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • Fresh parsley, chopped, for garnish

  • Wooden or metal skewers


Instructions:

  1. Prep skewers:
    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  2. Marinate chicken:
    In a large bowl, whisk together ranch dressing, minced garlic, Parmesan, olive oil, lemon juice, Italian seasoning, salt, and pepper.
    Add the cubed chicken and toss to coat evenly.
    Cover and refrigerate for at least 30 minutes, preferably 2–4 hours for deeper flavor.

  3. Skewer the chicken:
    Thread the marinated chicken onto the skewers, leaving a little space between pieces for even cooking.

  4. Grill:
    Preheat grill to medium-high heat (about 400°F / 200°C).
    Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through (internal temp of 165°F / 74°C) and nicely charred.

  5. Serve:
    Remove from grill, sprinkle with extra Parmesan and chopped parsley. Serve hot with dipping sauce, salad, or grilled veggies.


Optional Add-ons:

  • Add veggies (like bell peppers, zucchini, or red onions) to the skewers.

  • Serve with a side of ranch or garlic aioli for dipping.

  • Top with a drizzle of melted butter and extra Parmesan for indulgence.
