Here’s a delicious recipe for Grilled Mozzarella BBQ Chicken Sandwiches – juicy, cheesy, and packed with smoky BBQ flavor!


Grilled Mozzarella BBQ Chicken Sandwiches

Ingredients (Serves 4):

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs for extra juiciness)

  • 1 cup BBQ sauce (your favorite brand or homemade)

  • Salt & pepper to taste

  • 1 tsp garlic powder

  • 1 tsp smoked paprika (optional)

For the Sandwich:

  • 4 sandwich rolls or brioche buns

  • 4 slices of fresh mozzarella cheese (or shredded if preferred)

  • 1 small red onion, thinly sliced (optional)

  • 1 tomato, sliced

  • Fresh lettuce or arugula

  • 2 tbsp mayonnaise (optional)

  • 1 tbsp olive oil or butter (for toasting the buns)


Instructions:

  1. Marinate the Chicken:

    • In a bowl or zip-top bag, combine the chicken with BBQ sauce, garlic powder, smoked paprika, salt, and pepper.

    • Marinate for at least 30 minutes (up to 4 hours for deeper flavor).

  2. Grill the Chicken:

    • Preheat your grill (or grill pan) to medium-high heat.

    • Grill the chicken for 5–7 minutes per side, or until fully cooked (internal temp 165°F / 74°C).

    • In the last 2 minutes of grilling, place a slice of mozzarella on each chicken piece and close the grill lid to melt the cheese.

  3. Toast the Buns:

    • Lightly brush the insides of the buns with olive oil or butter.

    • Toast on the grill until golden and crispy (about 1 minute).

  4. Assemble the Sandwiches:

    • Spread mayonnaise on the bottom half of the bun (optional).

    • Add lettuce, the grilled chicken with melted mozzarella, tomato slices, red onion, and a drizzle of extra BBQ sauce if desired.

    • Top with the other half of the bun.

  5. Serve:

    • Serve hot with fries, coleslaw, or a simple green salad.


Tips:

  • Use smoked mozzarella for a richer flavor.

  • Add pickled jalapeños for heat.

  • Turn it into a panini by pressing the sandwich after assembly.
