Grilled Chicken Avocado Salad
Ingredients:

2 boneless, skinless chicken breasts

1 ripe avocado, diced

4 cups mixed salad greens (like spinach, arugula, romaine)

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1 cucumber, sliced

1/4 cup fresh cilantro or parsley, chopped (optional)

Olive oil

Salt and pepper

1 tsp smoked paprika (optional)

Juice of 1 lime

1 tbsp balsamic vinegar or your favorite vinaigrette
Instructions:

Prep the chicken:

Drizzle chicken breasts with olive oil, salt, pepper, and smoked paprika.

Let them marinate for about 10-15 minutes if you have time.

Grill the chicken:

Heat a grill pan or outdoor grill over medium-high heat.

Grill chicken breasts for about 6-7 minutes per side, or until cooked through (internal temp 165°F/74°C).

Let rest for 5 minutes, then slice thinly.
