Grilled Chicken Avocado Salad*

Grilled Chicken Avocado Salad

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 1 ripe avocado, diced

  • 4 cups mixed salad greens (like spinach, arugula, romaine)

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1 cucumber, sliced

  • 1/4 cup fresh cilantro or parsley, chopped (optional)

  • Olive oil

  • Salt and pepper

  • 1 tsp smoked paprika (optional)

  • Juice of 1 lime

  • 1 tbsp balsamic vinegar or your favorite vinaigrette


Instructions:

  1. Prep the chicken:

    • Drizzle chicken breasts with olive oil, salt, pepper, and smoked paprika.

    • Let them marinate for about 10-15 minutes if you have time.

  2. Grill the chicken:

    • Heat a grill pan or outdoor grill over medium-high heat.

    • Grill chicken breasts for about 6-7 minutes per side, or until cooked through (internal temp 165°F/74°C).

    • Let rest for 5 minutes, then slice thinly.

  3. Prepare the salad:

    • In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and cilantro/parsley.

    • Add diced avocado gently.

  4. Dress the salad:

    • Squeeze lime juice over the salad and drizzle with balsamic vinegar or vinaigrette.

    • Toss lightly to combine, being careful not to mash the avocado.

  5. Assemble and serve:

    • Top the salad with grilled chicken slices.

    • Add an extra drizzle of olive oil or dressing if desired.

    • Serve immediately and enjoy!
