Grilled Bruschetta

Here’s a simple and delicious Grilled Bruschetta recipe for you!


Grilled Bruschetta

Ingredients:

  • 1 baguette or rustic Italian bread, sliced about 1/2-inch thick

  • 3-4 ripe tomatoes, diced

  • 2 cloves garlic, minced (plus 1 whole clove for rubbing the bread)

  • 1/4 cup fresh basil leaves, chopped

  • 2 tablespoons extra virgin olive oil (plus more for brushing bread)

  • 1 tablespoon balsamic vinegar (optional)

  • Salt and pepper, to taste


Instructions:

  1. Prep the Tomato Topping:
    In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar (if using), salt, and pepper. Mix gently and let it sit for about 10-15 minutes to let the flavors meld.

  2. Grill the Bread:
    Preheat your grill to medium-high heat. Brush each slice of bread lightly with olive oil on both sides. Place the bread slices directly on the grill and cook for about 1-2 minutes per side or until grill marks appear and bread is toasted.

  3. Garlic Rub:
    Once toasted, remove bread from grill and immediately rub one side of each slice with the whole garlic clove. This gives a lovely subtle garlic flavor.

  4. Assemble:
    Spoon the tomato mixture generously on top of each grilled bread slice.

  5. Serve:
    Arrange on a platter and serve immediately as a fresh appetizer or snack!


Tips:

  • You can add a sprinkle of shredded mozzarella or grated Parmesan before grilling for a cheesy twist.

  • For extra flavor, drizzle a bit more olive oil or balsamic glaze on top before serving.
