Here’s a great yummy salad recipe that’s fresh, flavorful, and easy to customize:


🥗 Great Yummy Salad Recipe

Ingredients:

  • Greens:

    • 2 cups baby spinach or mixed spring greens

    • 1 cup arugula (optional for a peppery kick)

  • Vegetables:

    • 1/2 cup cherry tomatoes, halved

    • 1/2 cucumber, sliced

    • 1/4 red onion, thinly sliced

    • 1/2 avocado, diced

  • Fruits (optional but delicious):

    • 1/2 apple or pear, thinly sliced

    • 1/4 cup dried cranberries or pomegranate seeds

  • Protein Add-ons (pick one or mix):

    • 1/2 cup grilled chicken, tofu, or chickpeas

    • 1 hard-boiled egg, sliced

    • 2 tbsp feta or goat cheese

  • Crunch:

    • 2 tbsp toasted nuts or seeds (almonds, walnuts, sunflower seeds)

    • Croutons (optional)


Dressing (Yummy Balsamic Honey Vinaigrette):

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • 1 tsp honey or maple syrup

  • Salt and pepper to taste

  • Whisk together until emulsified


Instructions:

  1. In a large bowl, combine the greens, veggies, and fruit.

  2. Add your protein and crunch.

  3. Drizzle with the vinaigrette just before serving.

  4. Toss gently to coat, and enjoy immediately.
