Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 1/4 cups granulated sugar

  • 4 large eggs

  • 2 teaspoons pure vanilla extract

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup whole milk or buttermilk

Optional Add-ins:

  • Vanilla bean seeds for extra flavor

  • Lemon zest for a citrusy twist

  • Mini chocolate chips or berries

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour mini loaf pans or line with parchment paper.

  2. In a large bowl, cream butter and sugar until light and fluffy (about 3–5 minutes).

  3. Add eggs one at a time, beating well after each addition. Stir in the vanilla.

  4. In a separate bowl, sift together flour, baking powder, and salt.

  5. Add dry ingredients to the butter mixture in three parts, alternating with the milk. Begin and end with dry ingredients. Mix just until combined.

  6. Divide batter evenly into prepared mini loaf pans.

  7. Bake for 25–30 minutes, or until a toothpick inserted comes out clean.

  8. Cool in pans for 10 minutes, then remove to a wire rack to cool completely.

Serving Suggestions:

  • Drizzle with vanilla glaze or dust with powdered sugar.

  • Serve with fresh berries and whipped cream.

  • Wrap in parchment and twine for gifting.
