Here’s a simple and flavorful recipe for Garlic Shrimp and Vegetable Sauté – a quick, healthy dish perfect for a weeknight dinner:


Garlic Shrimp and Vegetable Sauté

Ingredients:

  • 1 lb (450 g) shrimp, peeled and deveined

  • 4 garlic cloves, minced

  • 2 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 zucchini, sliced

  • 1 cup broccoli florets

  • 1 small red onion, thinly sliced

  • 1 tbsp soy sauce (or coconut aminos for a gluten-free option)

  • 1 tsp lemon juice

  • Salt and pepper, to taste

  • Optional: red pepper flakes or a pinch of chili powder for heat

  • Fresh parsley or basil, chopped for garnish


Instructions:

  1. Prep the shrimp: Pat shrimp dry and season with a pinch of salt and pepper.

  2. Sauté vegetables:

    • In a large skillet or wok, heat 1 tbsp olive oil over medium-high heat.

    • Add the broccoli and sauté for 2–3 minutes.

    • Add the bell peppers, zucchini, and onion. Cook for another 4–5 minutes until slightly tender but still crisp.

    • Remove vegetables and set aside.

  3. Cook the shrimp:

    • In the same skillet, add the remaining 1 tbsp olive oil.

    • Add garlic and sauté for 30 seconds until fragrant.

    • Add shrimp and cook for 2–3 minutes per side, until pink and opaque.

  4. Combine:

    • Return the vegetables to the skillet with the shrimp.

    • Add soy sauce, lemon juice, and optional red pepper flakes.

    • Toss everything together and cook for 1 more minute.

  5. Serve:

    • Garnish with fresh herbs and serve hot over rice, quinoa, noodles, or on its own.
