📝 Ingredients:

For the Garlic Herb Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)

  • 4 cloves garlic (minced)

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 1 tsp dried oregano

  • 1 tsp dried thyme (or Italian seasoning)

  • 1 tsp fresh rosemary (or ½ tsp dried)

  • Salt & black pepper, to taste

  • Juice of ½ lemon (optional)

  • Fresh parsley (for garnish)

For Mashed Potatoes:

  • 2 lbs (about 4 large) russet or Yukon gold potatoes (peeled and cubed)

  • ½ cup whole milk (warm)

  • ¼ cup unsalted butter

  • Salt, to taste

  • Pepper, to taste

  • Optional: 2–3 tbsp sour cream or cream cheese (for extra creaminess)

For Glazed Carrots:

  • 1 lb carrots (peeled and cut into sticks or rounds)

  • 2 tbsp butter

  • 2 tbsp brown sugar or honey

  • ½ tsp salt

  • Optional: pinch of cinnamon or nutmeg

  • Fresh thyme or parsley for garnish (optional)


🔪 Instructions:

1. Prepare the Chicken:

  1. Pat chicken dry with paper towels. Season both sides with salt, pepper, oregano, thyme, and rosemary.

  2. In a large skillet over medium heat, add olive oil and butter.

  3. Once butter is melted and sizzling, add garlic and sauté for 30 seconds (don’t burn it).

  4. Add chicken and sear for 4–5 minutes per side until golden brown and fully cooked (internal temp: 165°F / 74°C).

  5. Optionally squeeze lemon juice over the chicken for a fresh finish.

  6. Remove chicken from pan and keep warm. You can tent it with foil.


2. Make Mashed Potatoes:

  1. Place potatoes in a large pot. Cover with cold water and add a good pinch of salt.

  2. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until fork-tender.

  3. Drain well and return potatoes to the pot. Mash with a potato masher or hand mixer.

  4. Add butter, warm milk, and optional sour cream. Mix until creamy.

  5. Season with salt and pepper to taste. Keep warm.


3. Prepare Glazed Carrots:

  1. In a medium skillet, add carrots and just enough water to cover them.

  2. Bring to a boil, reduce heat, and simmer for 6–8 minutes until just tender. Drain.

  3. In the same skillet, add butter and brown sugar (or honey).

  4. Return carrots to the skillet. Toss and sauté on medium heat for 5–7 minutes until glazed and lightly golden.

  5. Add a pinch of salt and optional cinnamon or nutmeg. Stir well.


🍽️ To Serve:

  • Plate a scoop of mashed potatoes.

  • Top or place next to a piece of garlic herb chicken.

  • Add a generous serving of glazed carrots on the side.

  • Garnish with fresh parsley or thyme if desired.


🔁 Variations & Tips:

  • Make it creamy: Add a splash of cream to the mashed potatoes for extra richness.

  • Add wine: Deglaze the chicken pan with a splash of white wine or chicken broth to make a quick pan sauce.

  • Roast carrots: Instead of stovetop, roast carrots at 400°F (200°C) for 25 minutes tossed in olive oil, honey, and herbs.
