Here’s a  recipe for Garlic Cilantro Chicken Bites with Kiwi Strawberry Salsa — a fresh, flavorful dish that combines savory, garlicky chicken with a bright and tangy fruit salsa. Great for appetizers, parties, or a light summer meal!


🍗 Garlic Cilantro Chicken Bites

Ingredients:

  • 1 lb (450g) chicken breast or thighs, boneless & skinless, cut into bite-sized pieces

  • 3 cloves garlic, minced

  • 1/4 cup fresh cilantro, finely chopped

  • 2 tbsp olive oil

  • 1 tbsp lime juice (fresh)

  • 1/2 tsp ground cumin

  • 1/2 tsp chili powder (optional, for heat)

  • Salt and pepper to taste

Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine olive oil, garlic, cilantro, lime juice, cumin, chili powder, salt, and pepper.

    • Add the chicken pieces and mix well to coat.

    • Cover and marinate in the fridge for at least 30 minutes, or up to 4 hours for deeper flavor.

  2. Cook the Chicken:

    • Heat a large skillet over medium-high heat.

    • Add a bit of oil if needed, then add the marinated chicken pieces in a single layer.

    • Cook for about 3–4 minutes per side, or until golden brown and fully cooked through (internal temp 165°F / 74°C).

    • Remove from heat and let rest for 2 minutes.


🍓🥝 Kiwi Strawberry Salsa

Ingredients:

  • 3 kiwis, peeled and diced

  • 5 strawberries, hulled and diced

  • 1/4 red onion, finely minced

  • 1/2 jalapeño, finely chopped (optional, for heat)

  • 1 tbsp fresh cilantro, chopped

  • 1 tbsp lime juice

  • Salt to taste

Instructions:

  1. Make the Salsa:

    • In a bowl, combine diced kiwi, strawberries, red onion, jalapeño (if using), cilantro, and lime juice.

    • Add a pinch of salt.

    • Toss gently and chill for at least 15–20 minutes to let the flavors meld.


🧑‍🍳 To Serve:

  • Plate the warm chicken bites.

  • Spoon kiwi strawberry salsa generously over the top or serve it on the side.

  • Garnish with extra chopped cilantro or a wedge of lime if desired.


🔄 Variations & Tips:

  • Add avocado chunks to the salsa for creaminess.

  • Use toothpicks for bite-sized party skewers.

  • Great served over rice, quinoa, or lettuce cups for a more complete meal.

  • If grilling, skewer the chicken for easy turning.
