Garlic Butter Lettuce, Tomato & Grilled Chicken Sandwich

Here’s a tasty Garlic Butter Lettuce, Tomato & Grilled Chicken Sandwich recipe for you:


Ingredients:

  • 2 slices of bread (your choice: sourdough, whole wheat, or ciabatta)

  • 1 boneless, skinless chicken breast

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 2 tbsp unsalted butter

  • 1 garlic clove, minced

  • 2-3 leaves of fresh lettuce (romaine or butter lettuce works great)

  • 2-3 slices of ripe tomato

  • Optional: mayonnaise or mustard for spreading


Instructions:

  1. Prepare the Chicken:

    • Pound the chicken breast to an even thickness (about ½ inch) for even cooking.

    • Season with salt and pepper on both sides.

    • Heat olive oil in a skillet over medium heat.

    • Cook the chicken breast for about 5-6 minutes per side, or until fully cooked and juices run clear.

    • Remove from heat and let rest for a couple of minutes, then slice.

  2. Make Garlic Butter:

    • In a small pan, melt the butter over medium-low heat.

    • Add the minced garlic and sauté for about 1-2 minutes until fragrant (don’t let it brown).

    • Remove from heat.

  3. Toast the Bread:

    • Brush the garlic butter generously on both slices of bread.

    • Toast the bread in a skillet or toaster oven until golden and slightly crispy.

  4. Assemble the Sandwich:

    • Optional: spread mayo or mustard on the inside of the bread slices.

    • Place the lettuce leaves on one slice.

    • Layer the sliced grilled chicken on top of the lettuce.

    • Add the tomato slices.

    • Close the sandwich with the other slice of garlic buttered toast.

  5. Serve:

    • Cut in half if desired, and enjoy!
