🧄 Garlic Butter Chicken with Velvety Parmesan Linguine

🍗 Ingredients

For the Garlic Butter Chicken:

  • 2 large boneless, skinless chicken breasts (or thighs)

  • Salt and black pepper to taste

  • 1 tsp Italian seasoning

  • 1/2 tsp smoked paprika (optional)

  • 4 cloves garlic, minced

  • 3 tbsp unsalted butter

  • 1 tbsp olive oil

  • 1 tbsp chopped fresh parsley (for garnish)

For the Velvety Parmesan Linguine:

  • 8 oz linguine (or pasta of choice)

  • 2 tbsp unsalted butter

  • 3 cloves garlic, minced

  • 1 cup heavy cream (or half-and-half for a lighter version)

  • 3/4 cup freshly grated Parmesan cheese

  • Salt and black pepper to taste

  • 1/4 tsp ground nutmeg (optional)

  • 1/2 cup reserved pasta water (adjust as needed)

  • Chopped parsley and extra Parmesan for garnish


🔪 Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Cook linguine until al dente. Reserve 1/2 cup pasta water and drain. Set aside.

Step 2: Prepare the Chicken

  1. Slice chicken breasts horizontally into cutlets or pound to even thickness.

  2. Season both sides with salt, pepper, Italian seasoning, and paprika.

  3. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.

  4. Sear chicken for 4–5 minutes per side, or until golden and cooked through.

  5. Add garlic and remaining 2 tbsp butter to the pan, spooning the melted garlic butter over the chicken for 1–2 minutes.

  6. Remove chicken and let rest. Slice before serving.

Step 3: Make the Parmesan Sauce

  1. In the same skillet, melt 2 tbsp butter over medium heat.

  2. Add garlic and sauté until fragrant (about 30 seconds).

  3. Pour in heavy cream, bring to a gentle simmer.

  4. Stir in Parmesan, salt, pepper, and nutmeg. Stir until smooth.

  5. Add reserved pasta water gradually until desired sauce consistency is reached.

Step 4: Combine and Serve

  1. Toss cooked linguine into the sauce, coating well.

  2. Plate pasta and top with sliced garlic butter chicken.

  3. Garnish with chopped parsley and extra Parmesan.


🍽️ Tips

  • Add sautéed spinach, mushrooms, or sun-dried tomatoes to the pasta for extra flavor and veggies.

  • Use pre-cooked rotisserie chicken to speed up prep time.

  • For a lighter version, use whole milk and reduce butter by half.
