🥩 Garlic Butter Beef Linguine in Creamy Parmesan Sauce

🍝 Ingredients:

For the beef:

  • 1 lb (450g) beef sirloin or ribeye, thinly sliced

  • Salt and pepper, to taste

  • 1 tsp Italian seasoning (optional)

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 4 cloves garlic, minced

For the sauce:

  • 2 tbsp butter

  • 1 small onion, finely chopped

  • 4 cloves garlic, minced

  • 1 cup heavy cream (or half-and-half for lighter version)

  • ¾ cup grated Parmesan cheese

  • Salt and black pepper, to taste

  • Pinch of red pepper flakes (optional)

  • ½ cup reserved pasta water (adjust as needed)

For the pasta:

  • 12 oz (340g) linguine

  • Fresh parsley, chopped (for garnish)

  • Extra grated Parmesan (for serving)


👨‍🍳 Instructions:

  1. Cook the pasta:

    • Bring a large pot of salted water to a boil.

    • Cook the linguine according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

  2. Sear the beef:

    • Season sliced beef with salt, pepper, and Italian seasoning.

    • Heat 1 tbsp olive oil and 2 tbsp butter in a large skillet over medium-high heat.

    • Add the garlic and sauté for 30 seconds.

    • Add the beef and cook until browned, about 2–3 minutes per side depending on thickness. Remove and set aside.

  3. Make the sauce:

    • In the same skillet, reduce heat to medium and add 2 tbsp butter.

    • Add chopped onion and sauté until translucent, about 3–4 minutes.

    • Add garlic and cook for 1 minute until fragrant.

    • Pour in the heavy cream and bring to a gentle simmer.

    • Stir in Parmesan cheese, and season with salt, pepper, and optional red pepper flakes.

    • Simmer for 3–5 minutes until thickened. If the sauce is too thick, add a bit of the reserved pasta water to loosen it.

  4. Combine everything:

    • Add cooked linguine to the sauce and toss to coat.

    • Add the seared beef and any juices back to the skillet and toss again until heated through.

    • Adjust seasoning if needed.

  5. Serve:

    • Plate the pasta and garnish with chopped parsley and extra Parmesan.

    • Serve warm with garlic bread or a fresh salad.


📝 Tips:

  • For extra richness, add a splash of white wine before the cream.

  • Mushrooms or spinach can be sautéed with the onions for more depth.

  • Swap beef with shrimp or chicken for variation.
