🥩 Garlic Butter Beef Bites

Ingredients:

  • 1.5 lbs (700 g) sirloin steak (or tenderloin/ribeye), cut into 1-inch cubes

  • 4 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp fresh thyme, chopped (or ½ tsp dried)

  • 1 tsp fresh rosemary, chopped (or ½ tsp dried)

  • Salt and black pepper, to taste

  • Optional garnish: chopped parsley or extra herbs

Instructions:

  1. Prep the beef:

    • Pat steak cubes dry with paper towels (important for browning).

    • Season with salt and pepper generously.

  2. Sear the beef:

    • Heat 1 tbsp olive oil in a heavy skillet (preferably cast iron) over high heat.

    • Once the oil is hot and shimmering, add beef cubes in a single layer (don’t overcrowd).

    • Sear for 1–2 minutes per side until nicely browned (don’t stir too much).

    • Remove to a plate. Work in batches if needed.

  3. Make garlic butter sauce:

    • Reduce heat to medium.

    • In the same skillet, add 4 tbsp butter.

    • When melted, stir in garlic, thyme, and rosemary.

    • Sauté for 30 seconds to 1 minute until fragrant (don’t brown the garlic).

  4. Combine:

    • Return beef bites to the skillet.

    • Toss to coat in garlic butter for about 1 minute.

    • Remove from heat.

  5. Optional: Garnish with chopped parsley or extra herbs before serving.


🥔 Creamy Mashed Potatoes

Ingredients:

  • 2 lbs (900 g) Yukon gold or russet potatoes, peeled and cut into chunks

  • ½ cup (120 ml) whole milk (warm)

  • ⅓ cup (80 ml) heavy cream (warm)

  • 4 tbsp unsalted butter

  • Salt, to taste

  • Pepper, to taste

  • Optional: 2 cloves roasted garlic or a dollop of sour cream for extra flavor

Instructions:

  1. Boil potatoes:

    • Add potatoes to a large pot of cold salted water.

    • Bring to a boil and cook for 15–20 minutes, or until fork-tender.

  2. Drain and mash:

    • Drain well and let sit for 1–2 minutes to release steam (this prevents watery mash).

    • Mash using a potato masher or ricer.

  3. Add dairy:

    • Add butter, warm milk, and cream gradually.

    • Stir until creamy and smooth. Adjust consistency as needed.

  4. Season:

    • Season with salt and pepper to taste.

    • Add roasted garlic or sour cream if desired.


🍽️ To Serve:

  • Spoon a generous scoop of mashed potatoes onto the plate.

  • Top with garlic butter beef bites and a drizzle of leftover garlic butter sauce from the skillet.

  • Garnish with parsley or chives if you like.
